Recipe Time - Spinach Stuffed Shells

haven't posted a recipe in a while... made this dish tonight, doing it a wee bit differently than my actual recipe reads. Turned out FANTASTIC! Try it, you won't be disappointed. Great for a "meatless" night.

15 jumbo shells
2 16oz jars of Classico Florentine and Spinach Spaghetti Sauce
1 sm onion, diced
3 cloves fresh garlic, minced
handful of fresh spinach
2 cups cottage cheese (you can use ricotta also)
2 cups freshly grated mozzarella cheese
1/2 cup Parmesan cheese (shredded)
2 Tbl chopped fresh parsley (if you buy a bunch, freeze the remainder for another recipe)
1 tsp McCormicks Italian Blend Grinder spices
handful Parmesan cheese

Preheat oven to 375 degrees. Cook shells according to directions, drain and let cool. Cook diced onion and garlic in a bit of olive oil in a skillet on med heat until onion is tender. Throw the fresh spinach in, cooking until spinach is wilted. Move skillet to cool.

Mix cottage cheese, mozzarella cheese and the 1/2 cup parmesan cheese in a bowl. Add parsley and Italian blend spices. Mix onion mixture into cheese mixture, combine well.

Pour one jar of the spaghetti sauce into a 9x12 baking dish. Stuff shells with a spoonful of the cheese mixture and lay them on top of the sauce. Cover shells with remaining jar of sauce, adding the remaining Parmesan cheese over the top.

Cook at 375 degrees for about 40 minute, until top is bubbly. Let stand for about 10 minutes.

This recipe freezes well! I make double sometimes, and freeze the extra for an easy meal the next week.

March Means March for Babies!

March for Babies is coming up! And, Twisted Ribbons wants to help this awesome cause. Find out more about how the March of Dimes organization funds important research to support healthy babies here: http://www.marchforbabies.org/howyouhelpbabies.aspx

A local Mom's Club is putting together a team for the big walk in Nashville on April 17th, and doing some fund raising to support. I will be making our family donation, but along w that, this year Twisted Ribbons will be donating 10% of all the March sales from the Etsy shop to the team as well!

This cause is very near to my heart. I have a dear friend who delivered her baby boy very early due to complications with the pregnancy. Her sweet baby boy was a true fighter, and was here with her and her husband for four months before being called up to heaven. Being blessed myself with two beautiful girls, I can't fathom the pain of that loss, and I think about her all the time. So, this donation will be made in her sweet baby boy's honor.

St. Paddy's Day

My six year old is very, very excited about St. Patrick's Day. Seriously. Maybe more than Christmas and Halloween. See, those naughty leprechauns came last year the night before St. Patrick's Day and they really left a mess. Chairs and tables toppled over, school work taped to the walls, and shamrocks on the ceiling.

She has been on a mission ever since to catch one of those naughty guys! We have been diligently working on her trap for a week now. At 6:30 am, she wanted to add a rainbow to the trap this morning to lure him in there ;)

I really intended to add some new recipes I've tried out here... time gets away from me these days!

Last night I tried out this very simple recipe from one of my fave magazines Real Simple:

Cheesy Baked Pasta With Spinach and Artichokes

Ingredients

8 ounces mezzi rigatoni or some other short pasta (1/2 box)
1 14-ounce can artichoke hearts, rinsed and quartered
1 9-ounce package frozen creamed spinach, thawed
1/4 cup grated Parmesan (1 ounce)
2 cups grated mozzarella (8 ounces)
black pepper

Directions

Cook the pasta according to the package directions. Drain and return it to the pot.
Add the artichoke hearts, spinach, Parmesan, 1 cup of the mozzarella, and ¼ teaspoon pepper to the pasta and toss to combine.
Heat broiler. Transfer the pasta mixture to a shallow 2-quart (or 8-inch square) broilerproof baking dish. Sprinkle with the remaining cup of mozzarella.
Broil until the cheese is browned in spots, 2 to 3 minutes.

My only substitution... I added some finely chopped mushrooms and I used some fresh spinach that I had on hand (just sauteed a bit). It was DELICIOUS! Super easy, and very good. Try it sometime!

We got a fair amount of snow this week for our neck of the woods... about 4-5 inches! Not too shabby. My girls had a blast in it.

Making a snowman was top priority on their list... only we aren't very good at making them :) Maybe some of my northern friends can give us their tips. But, my girls were proud of "Frosty" anyhow.

While snowed in, I had a chance to organize my craft area a bit. I found some leftover crocheted hats and flowers from my last craft show, so I went ahead and put them in my Etsy shop. Take a look! All flowers are removable to wear alone.

Wow - wasn't it just like 2010? That went fast. Hope you all had a lovely holiday season.

A little about Heather and her business:

My name is Heather and I'm the owner and designer of All You Need Designs - custom designing all you need! I've been married to my husband for 8 years, and we have 2 beautiful children - a 5 year old son and 2 year old daughter. I've always been a creative being - in school art was always my passion - especially painting and drawing. But sometimes life doesn't go the way you plan, and my day job does not involve much art or creativity. In my spare time, I taught myself how to use Photoshop and that's when I started graphic designing. When I first started planning my Etsy shop, it was going to be strictly for graphic design products, like invitations and cards. But then I started playing with beads, and it turned into another passion for me. It began with beaded bookmarks and then it exploded from there into wine charms, key chains, jewelry...I love thinking up new ways to use beads!

It's nice for me to have a variety of creative outlets because it allows me to change things up and stay busy. If I'm going through a dry spell with jewelry design ideas, I can turn on the computer and play with graphic designs instead. October is National Breast Cancer Awareness Month

Don't forget - October is National Breast Cancer Awareness Month. According to the National Cancer Institute, 1 in 8 American women will be diagnosed with this disease in their lifetime.

Twisted Ribbons has a couple of new things to show support for this important reminder.

$2 from the sale of either of these two items will go directly to the Susan G Komen fund, supporting the research for the cure of this disease. These are both listed in my Etsy shop. I will make the donation, along with our family's donation at the end of October.

This disease has affected our family directly, as it has many others. If you are not already familiar, please review the risk factors and prevention methods appropriate for yourself, and your family on the Komen site.

What's for dinner 10/5/2010?!?

What do you cook for dinner? Any new recipes? These are common questions at any mommy related function these days. As more and more families seek cheaper alternatives to eating out and healthier recipes, a lot of us are eating at home more!

I love to cook. Wish I had time to make a big gourmet meal every night, but life gets in the way. But, I'm pretty decent at looking at the cupboard and throwing something together every night. I wish I was better at meal planning, but I never seem to have the patience for it. So, I'm more of a "it's five o'clock, what I can make for dinner" kind of girl.

Because a blog probably shouldn't be all about bows, I'm going to attempt to post at least one weekly recipe of something I made on the fly that week. We'll see how it goes!

So, here is this week's recipe from my freezer/refrigerator/cupboard... no prep, what so ever. Did I mention I don't measure things? So, just eyeball it... you'll be fine.

4 frozen tilapia fillets
1/2 cup whole wheat flour
1 egg
1/4 cup milk
1 cup Panko italian breadcrumbs
little feta cheese
2 tablespoons olive oil

Thaw fish in cold water. If you have a little lemon or lime juice, throw a bit in with the water to take away a little of the "fishy" taste.

Heat olive oil in non stick skillet on medium heat. Pull out three deep plates or bowls. Flour in one, egg and milk wisked together in another, panko crumbs in the third. Dip tilapia fillets in the flour, egg mixture, and the panko crumbs, coating each side. Throw fillets in skillet. Cook on each side until center is done (approximately 5 min per side for me), and top each fillet with feta cheese.

Serve dinner! I made some smashed red potatoes and salad as a side. It was delicious! Even my three year old loved it. My extremely picky five year old wouldn't touch it, but you can't win them all ;)

Football Time in Tennessee

I do love summer. I really do. Hitting the pool, warm summer nights, those lovely thunderstorms that crop up in the early evening heat...

But, by mid July I'm usually getting the itch for fall. Cooler weather, back to school for my cutie girls and FOOTBALL! Football is huge here in TN. We love it. LOVE it.

My 3 yr old was my alarm clock this morning at 5:35am with a very sweet whisper "Mommy, can I watch cartoons now?". Good thing she is cute. One of the wonderful things about summer time is that no matter how many black out curtains I hang in her room, the first sliver of sunlight to hit her little face and she is UP!

But, it is amazing how much you can get done when you are up by 5:45am ;)

Lately, I'm in love with this new gingham ruffle ribbon I found. LOVE. Can't get enough! So much cuteness to be created with it.

Baby Pink Love

I found this gorgeous baby pink satin the other day in the scraps at the fabric store (my favorite bin to dig through ;). I couldn't resist it. The color is so pretty.

It went right into my fabric flower pile, and out came 2 new headbands!

The first is a custom order... love the way it turned out. Black and pink 3 flower headband:

Girl's Night OUT!

We experienced some serious rain and flooding here in TN over the weekend. My family and house are fine, but lots of damage around us. My prayers are with those who were not so fortunate.

With the constant rain over the weekend, I had some time to try some new projects finally. These are my new ribbon flowers. Handmade from high quality grosgrain ribbon. I love how they turned out!

Just finished my second set of baby bows this week! I love making these itty bitty cuties.

These were a custom order for my neighbor's little girl. She is adorable!

And, these sweet ribbons were put on baby clips for her too:

These baby clips work well for those little girls with just a bit of hair. They are light weight, and snug. Base clip is a small snap clip, lined with ribbon to keep them in place:

These are made of organza, and have just a hint of sparkle. Delicate and pretty - perfect for spring and Easter dresses.

My two year old loooooves Mickey Mouse Clubhouse. She will get up and dance along to the music. So cute! So, these Mickey themed items are inspired by her.

GripZies No Slip Grip

I've been investigating some options to help my alligator clips stay in a bit better. I've settled on the GripZies no-slip grips for a couple of reasons. They work GREAT! I've added them to several of my girls' bows. And, they are non toxic and latex free! Another great selling point as latex allergies become more and more prevalent.

So, I'm proud to say that my alligator clips will now be lined with this great product.

Basic Hairbow Clip Information

I get lots of questions about the types of clips that I use. Here are some pictures of the basic clips. I can use almost any clip on any bow, but some definitely work better for certain things.

These are generally called "flat clips". They pop open and closed. They work well for barrettes:

This clip is called a "french clip". It locks together. These are typical clips for bows, especially larger ones:

This clip is generally called an "alligator clip". They work well for barrette styles, but some people prefer to use them as bows, clipped on top of a small ponytail, etc:

And, this is a plastic foldover clip. It has grips in the inside. These work great for little bits of hair. Small bows can be put on these:

These are the clips that I most commonly use. I cannot guarantee that the metal ones are lead free, but I do buy from suppliers who note that they are certified lead free. If you have a clip preference for the bows that you purchase, please let me know at time of purchase and I'll be glad to accommodate!

Also, my barrettes generally are made to put in on the right side of the head, with the exception of barrette sets which usually include opposite barrettes.

Welcome to Twisted Ribbons!

I am an engineer turned stay at home mom to two of the cutest little girls you have ever seen ;) My oldest is 5 yrs old, and my youngest is two.

I started making bows for my girls when I was having a hard time finding things that I liked out there. People starting asking me about the bows and barrettes I was making, and soon I was making them for others too. That is pretty much how it all began!
