Recipe Time - Spinach Stuffed Shells

haven't posted a recipe in a while... made this dish tonight, doing it a wee bit differently than my actual recipe reads. Turned out FANTASTIC! Try it, you won't be disappointed. Great for a "meatless" night.

15 jumbo shells
2 16oz jars of Classico Florentine and Spinach Spaghetti Sauce
1 sm onion, diced
3 cloves fresh garlic, minced
handful of fresh spinach
2 cups cottage cheese (you can use ricotta also)
2 cups freshly grated mozzarella cheese
1/2 cup Parmesan cheese (shredded)
2 Tbl chopped fresh parsley (if you buy a bunch, freeze the remainder for another recipe)
1 tsp McCormicks Italian Blend Grinder spices
handful Parmesan cheese

Preheat oven to 375 degrees. Cook shells according to directions, drain and let cool. Cook diced onion and garlic in a bit of olive oil in a skillet on med heat until onion is tender. Throw the fresh spinach in, cooking until spinach is wilted. Move skillet to cool.

Mix cottage cheese, mozzarella cheese and the 1/2 cup parmesan cheese in a bowl. Add parsley and Italian blend spices. Mix onion mixture into cheese mixture, combine well.

Pour one jar of the spaghetti sauce into a 9x12 baking dish. Stuff shells with a spoonful of the cheese mixture and lay them on top of the sauce. Cover shells with remaining jar of sauce, adding the remaining Parmesan cheese over the top.

Cook at 375 degrees for about 40 minute, until top is bubbly. Let stand for about 10 minutes.

This recipe freezes well! I make double sometimes, and freeze the extra for an easy meal the next week.

March Means March for Babies!

March for Babies is coming up! And, Twisted Ribbons wants to help this awesome cause. Find out more about how the March of Dimes organization funds important research to support healthy babies here: http://www.marchforbabies.org/howyouhelpbabies.aspx

A local Mom's Club is putting together a team for the big walk in Nashville on April 17th, and doing some fund raising to support. I will be making our family donation, but along w that, this year Twisted Ribbons will be donating 10% of all the March sales from the Etsy shop to the team as well!

This cause is very near to my heart. I have a dear friend who delivered her baby boy very early due to complications with the pregnancy. Her sweet baby boy was a true fighter, and was here with her and her husband for four months before being called up to heaven. Being blessed myself with two beautiful girls, I can't fathom the pain of that loss, and I think about her all the time. So, this donation will be made in her sweet baby boy's honor.

St. Paddy's Day

My six year old is very, very excited about St. Patrick's Day. Seriously. Maybe more than Christmas and Halloween. See, those naughty leprechauns came last year the night before St. Patrick's Day and they really left a mess. Chairs and tables toppled over, school work taped to the walls, and shamrocks on the ceiling.

She has been on a mission ever since to catch one of those naughty guys! We have been diligently working on her trap for a week now. At 6:30 am, she wanted to add a rainbow to the trap this morning to lure him in there ;)

What's for Dinner 2/9/2011?

I really intended to add some new recipes I've tried out here... time gets away from me these days!

Last night I tried out this very simple recipe from one of my fave magazines Real Simple:

Cheesy Baked Pasta With Spinach and Artichokes

Ingredients

Directions

  1. Cook the pasta according to the package directions. Drain and return it to the pot.
  2. Add the artichoke hearts, spinach, Parmesan, 1 cup of the mozzarella, and ¼ teaspoon pepper to the pasta and toss to combine.
  3. Heat broiler. Transfer the pasta mixture to a shallow 2-quart (or 8-inch square) broilerproof baking dish. Sprinkle with the remaining cup of mozzarella.
  4. Broil until the cheese is browned in spots, 2 to 3 minutes.

My only substitution... I added some finely chopped mushrooms and I used some fresh spinach that I had on hand (just sauteed a bit). It was DELICIOUS! Super easy, and very good. Try it sometime!

Let it SNOW!

We got a fair amount of snow this week for our neck of the woods... about 4-5 inches! Not too shabby. My girls had a blast in it.

Making a snowman was top priority on their list... only we aren't very good at making them :) Maybe some of my northern friends can give us their tips. But, my girls were proud of "Frosty" anyhow.




While snowed in, I had a chance to organize my craft area a bit. I found some leftover crocheted hats and flowers from my last craft show, so I went ahead and put them in my Etsy shop. Take a look! All flowers are removable to wear alone.

Happy New Year!

Wow - wasn't it just like 2010? That went fast. Hope you all had a lovely holiday season.

We finished 2010 with some fun news... I won a Build-A-Bear gift card from Three Ladies and a Dad reviews! How cool, right? Check out her blog - she does lots of great giveaways.
